THE GENUINE ARTICLE
Txistorra is a semi-cured sausage. TXISTORRA ARBIZU* is always made using pork, either dewlap or panceta (pork belly). The meat selected is put through the mincing machine and paprika, salt and a little water is added during the kneading process. Once the mass is properly kneaded, it is removed from the mixer and added to the filling machine for subsequent stuffing in either lamb tripe or collagen. After this process has been completed, it is dried for four or five days and then vacuum packed. It is now ready to be sold.
We elaborate our chistorra in sweet or spicy flavor.

The fresh Arbizu “txorizos” are handcrafted like the “txistorra”, since the process is the same. The ingredients of “chorizos” are the same as “txistorra”, with the exception of spicy paprika.
Arbizu “txorizos” are presented in small portions like those of a lifetime to make it easier to cook them.

Txorizo sarta is a cured fresh meat, ideal for snacking or lunch. A natural and high quality product with the best flavor.
In Arbizu we have two varieties, sweet or spicy.
